What Is Needed in Order to Make Mead?


For two gallons of mead, add 7 gallons of unchlorinated water to a 3-gallon kettle (minimum). Use a scoop (sanitized, of course) and drain some hot water from the pan. Pour hot water into a bowl of honey, close the lid and shake.

In order to make mead, a person needs the ingredients of honey, water, and yeast. Special varieties can replace the water with fruit juice. In addition, several tools commonly found in a basic brewing kit can be used to produce mead. So the same materials normally used for brewing beer may be used for mead as well.

Potassium metabisulphites are commonly used by commercial and home honey producers for sanitation purposes. Alternatively, some methods of making mead require the honey to be sterilized by adding Campden tablets or potassium metabisulfite instead of boiling the honey.

The General Process for Producing Mead

Pour 3 liters of water into the wort to cool it down and of course add the required amount of water for the mead. Using a hydrometer during this step will help you determine the alcohol content of your mead. If you are using a plastic bucket or glass jug, you will need an airlock on top to allow air to escape after the fermentation process starts, which will start after about 24 hours.

When the temperature is between 65 and 75 degrees Fahrenheit, pour the liquid into what you intend to ferment (most likely a bottle if you buy a mead kit). Now transfer the honey to a fermentation container or a bottle of boiled water and fill it with more hot boiled water. Now add honey to boiled water and stir again until all the honey is dissolved.

Add 1/2 teaspoon of potassium sorbate per gallon of mead and stir to stop fermentation. However, if you do, it is highly recommended that you stabilize the mead with potassium sorbate so that the yeast does not break down or ferment slowly after bottling. If you want a sparkling, carbonated mead like beer or champagne, you will need to bottle the beer or champagne as the carbonation will push the wine cork out of the bottle or worse, the bottle may burst.

Variations on the Recipe for Soda Mead

Making a soda mead will also be a breeze with beer bottles, given their natural strength, right down to the carbonation levels of the beer. You can also use brewer’s yeast to make the mead sweeter, which will not ferment all available sugars, resulting in a sweeter finished mead. To make the mead sweeter, add more honey (3 cups or more) and use sweet wine yeast (Lalvin 78-B Narbonne is some of the best you can use).

To make mead, use less honey (2 cups as mentioned) and add champagne yeast. You can also make a dry version and add more honey or sugar after bottling. Although this is good, it also means that your honey is currently very dry and you can add some honey to sweeten it (this is called softening the back).

This extra honey addition can cause the mead to re-ferment, so add 2 Campden tablets to the honey to avoid this. Campden tablets can also be used at the end of fermentation to stabilize the mead.

Additional Notes on Making Carbonated Meads
